The lamb shoulder often consists of the neck, arm and shoulder blade. Although not as tender as the loin, it can still be cut into chops and dry cooked through grilling/BBQ. Cutting the shoulder into smaller pieces and dry roasting or stewing them are other viable options for cooking a lamb shoulder.
